My friend from Cincinnati made this peanut chutney when she visited us last week. All of us became great fans of this recipe. Hope u will also like it!
1 cup dry roasted peanuts (i roasted them with skin. You can also use the naked ones)
8-10 cilantro stems (with leaves, of course ;) - chopped
1 teaspoon tamarind paste or 1 tablespoon lemon juice
3-4 tablespoons yougurt (optional)
2 green chillies (add more if you can tolerate spice level beyond mild)
Grind all of the above into a very fine paste, adding little water if necessary. Dont make it too thick or too watery. Needs to be like a yogurt consistency)
1 tablespoon unrefined cold-pressed coconut oil - i buy it from costco
1/4 of a large onion - chopped fine
2 teaspoon urad dal - indian store item
1 dried red chilly - u get this in indian store
1 pinch asefetida powder (i buy it from indian store - LG brand, in powder form)
Salt to taste - i use 1/2-3/4 teaspoon (we go pretty low on salt)
Heat coconut oil in medium-high, and add 1/4 teaspoon mustard seeds. When they crack, add 2 teaspoons urad dal and stir until it turns light brown. Add 1 dry red chilli, 6-7 curry leaves, 1 pinch of asafetida powder, and 3 tablespoons of finely chopped onion. Add salt to taste. Once the onion is sauted, add the same into the ground peanut. Mix well. Peanut chutney is ready!!
