Instant pot Banana Bread

Made a whole wheat + oats flour banana bread with no added sugar.
Best part about IP is it doesn't require hand holding and things get done very efficiently ðŸ˜Š
Here's my version of the Banana bread recipe
Prep time - 15 mins
Cook time - 60 mins manual mode and then NPR
1. Mix 2 eggs, half a stick of butter together for a minute or so (use hand mixer)
Eggs and butter should be at room temperature before beating it
2. Mash the over ripen bananas (I used 4 large bananas) with a fork. Add this to the egg + butter batter
3. Add a dash of dates purée and vanilla essence to this batter
4.Now the dry ingredients - mix 1 1/4 cup whole wheat flour and 1/2 cup oats flour, 1 tsp each of baking powder n baking soda and a dash of salt. Now add these to the wet ingredients and swiftly fold in everything with a spatula
Add 1/2 cup of yogurt made in my IP earlier to mix n fold the batter well.
5.Add handful of chia seeds, roasted almond powder, crasins, raisins and folded all into the batter gently
6.Keep the batter aside and greas a cake tin with butter n flour and pour the bread batter into it.
7. Pour 2 cups of water in IP, placed the trivet on it and put my cake tin on the trivet and set the IP to 60 mins manual mode with the vent closed and then Natural Pressure Release

Rava Idli

1 cup of Rava (Roast the rava to make sure raw smell goes away)
 Chopped shredded carrots 1/4th cup
1 Thai green chili chopped
1 cube of ginger chopped
pinch of asefoetida
1.25 cups yogurt
pinch of baking soda (optional)
Salt - to taste (3/4 to 1 teaspoon)

Spluttered black mustard; urad dal, green chili, ginger, asefoetida, then added chopped carrots and Idli Rava. 

Add approximately 1.25 cups thick yogurt (just enough to get batter consistency). 
Add chopped cilantro leaves.
Add salt.

Rest the batter for 20 minutes. 

Prepare the Idlies. 
Poured idli batter (makes 12 idlis with this proportion)
Steam it in Instant Pot for 17 minutes from start to finish
(Takes about 9 minutes after steam builds up).

Keep the knob always in the steam venting position. 

 Quick release after 17 minutes, idli ready!

Pad thai sauce

1 to 1.5 tablespoons tamarind paste to taste

1/4 cup chicken stock

3 tablespoon fish sauce

1 tablespoon soy sauce

1/2 to 1 teaspoon chili sauce, OR 1/3 to 3/4 tsp. cayenne pepper, to taste

1/8 teaspoon ground white pepper

3 to 4 tablespoons palm sugar OR brown sugar

Instant pot hyderabadi haleem

Recipe shared by my friend Seetha in San Diego:


Here is the recipe for IP Hyderabadi Haleem, the fruit of a joint culinary experiment with a dear friend yielding delicious results! 

Recipe: 
1lb lamb (bone-in) shanks chopped 
1lb lamb, (boneless) stew cut

Powder: 
1/2 tsp shahi jeera
3" cinnamon sticks
15 pods of cardamom 
3/4 tsp black peppercorns 
3/4 tsp sesame seeds
1 tsp cumin seeds
10 almonds

3 tsp moong, masoor, urad, Chana dal (-EACH) 
3/4 cup wheat
3/4 cup ghee
7 green chilis
1/2 cup dried rose petals
2tbsp ginger garlic paste
1.5 cups onions sliced
8 cups water
1 cup milk
1/2 cup yogurt

1/2 cup fried onions
Handful of mint and coriander leaves, chopped
Lemon wedges

- turn instant pot on sauté mode, add the 3/4 of the ghee, ginger garlic, meat. 
- Mix well, transfer to another container to do pip and add dals, wheat, powdered spices, green chilies, onions, milk, yogurt, rose petals, water and salt to taste. 
- Rinse the instant pot container, add water, trivet and set the pot.
- Close and cook on "Meat" mode for 45mins. NPR
- Once cooled completely, remove the pip container and use a potato masher to mash the mixture. The meat should fall apart and shred when mashed. Use a ladle to scoop out the big bones. 
- Adjust salt.
- Add the fried onions, coriander and mint leaves and mix well. 
- Serve hot into bowls with a wedge of lemon to squeeze over each serving.

Glazed donuts



 Get  the complete pancake mix (just add water type of mix). Make the dough with the mix like u would make for bread/nan/roti by adding water and powdered sugar appropriate for the amount of pancake mix you use.

Take small balls and roll them out, and cut hole in the middle. Fry it up, both sides in oil (medium heat). Mix 1/3 cup powdered sugar with 1 tablespoon milk, and coat each donut with sugar glaze right after u take it out of oil. Let it cool down, and donut is ready!
