Baked Cauliflower broccoli with shrimp - gluten free - easy recipe

Ingredients:
1 small sized Cauliflower - 15 florets
1 bunch of broccoli - 15 florets
1 cup frozen shrimp
1/2 fresh lemon juice
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
Salt to taste
3 tablespoons avocado oil

Preparation:
1. Preheat oven to 400F.
2. Coat bottom of the tray with 1 tablespoon avocado oil. 
3. Lay the florets and shrimp. 
4. Sprinkle pepper, salt, and lemon juice.
5. Drizzle remaining avocado oil on top.
6. Bake in bottom rack for 25 minutes. 
7. Turn the food around after 15 minutes. (Alternatively u can try broiling for the last 10 minutes instead of turning it around for a crispier veggie feel.)
8. Serve warm and enjoy this simple healthy dish.

Rice Crackers - Italian Style! (Gluten free)

Ingredients:

Total Time: 35-40 minutes

Quantities:

1.5 cups rice flour
1 teaspoon unsalted garlic powder
1 teaspoon Italian seasoning
6 tablespoons salted cold butter cut into 1/2 inch cubes
1/2 cup cold water
If your butter and garlic powder are  unsalted, then please include 1/2 teaspoon salt

Method:

1. In a blender, combine rice flour + garlic pwder + italian seasoning + (salt if needed). Blend well.
2. Add butter and pulse till it mixes well.
3. Add water, and blend again until a thick dough forms.
4. Divide dough into two equal parts. Wrap separately in aluminium foil or plastic wrap, and keep in refrigerator to cool/firm up for 20 minutes.
5. After 20 mins, take the dough roll out. Place each roll on a parchment paper, and cover it with  another parchment paper.

6. Now roll the dough into 0.2 centimeter or 1/16 inch thickness (one cracker thick).



7. Repeat steps 5 and 6 for the second dough roll.
8. Preheat oven to 350F. You may use the lowest rack for the baking sheets.
9. Lay the rolled dough (including the parchment papers wrapping it) in the refrigerator for 5 minutes.
10. Take the flattened dough from refrigerator, and remove the top parchment paper. Using a pizza cutter, cut the dough into 2 inch squares (even if u cant get the squares right, dont worry.. It will taste just as great :). 
11. Move the dough along with the bottom parchment paper to ur cookie tray.


12. Repeat steps 10 and 11 for the second batch of flattened dough.
13. Bake at 350F for 10 minutes, and turn the side of the dough. Bake for another 5-7 minutes.
14. Take it out, break it up into squares, and cool on baking sheet before you  attack!

Baked Ribbon Pakka-vada (gluten free)


Time for some healthy crunchy baked  snacks..

Ingredients:


Equipment:
Sevanaazhi & cookie/baking tray


Quantities:
1 cup rice flour
1 cup besan powder
1/2 teaspoon red chilli powder
1 pinch asefotida powder
1 tablespoon coconut oil
1 teaspoon Gingely seeds (optional)
Salt to taste (i used 1/2 teaspoon)
Water - just enough to roll the dough  into a soft ball


Preparation:
1. Mix all ingredients with just enough water to roll the dough into a smooth ball. Make it little more softer than your regular chapathi dough consistency.



2. Put it into the seva nazhi, and squeeze to make dough stripes lengthwise on ur cookie tray. Try and see if u can make straight lines without breaking. I made many a curved broken stripes ;)


3. Preheat the oven at 375, and bake it for 20 minutes. One side should be almost done.


4. Flip the side of eac ribbon and bake for another 7 minutes. 


Crunchy ribbon pakkavadas ready. Break them up and eat, or cool and store in a container!

Bake a Bread in Less Than 5 Minutes... The Gluten-free Way!

Aaaaaww.. Thats my sweet 'n soft flourbed right here!

Packaged ingredients:


Get ready to prepare the dough - its easy peasy.. Just 2 minutes!


Quantities:
1/3 cup almond flour
1 tblspn flax meal/coconut flour/chia bran
1/2 tspn baking powder
1/8 tspn salt
1 egg whisked
2.5 tablspn melted coconut oil/butter/ghee

Preparation:

1. Grease a microwave-safe dish (i used my pyrex lunch container)
2. Mix all ingredients with a fork


3. Pour mixture into the microwave-safe container

4. Microwave for 90 seconds on HIGH

5. Wait to cool for a few minutes (you can lick up the mixing bowl while waiting..like I did 😛)


6. Slice it up, put ur favorite spread or leave it plain, and quickly eat!
