Healthy & Easy Veggie Egg Muffins



Ingredients:
1. Uncooked quinoa - 1 cup
2. 1/2 cup fresh grated cabbage
3. 1 cup thinly chopped fresh broccoli
4. 3/4 cup carrot
5. 3/4 cup thinly chopped spinach
6. 8-10 thinly sliced fresh mint leaves or coriander leaves
7. 2 cups water
8. Salt & pepper (add to your taste)
9. 4 tablespoon grated Mozzarella cheese
10. 6 whole eggs

Preparation:
Preheat oven to 375 F. 
Grease muffin tray.

Add quinoa to boiling water. Cook for 8-10 minutes and keep it aside. 

In a large mixing bowl, beat up the eggs with salt, pepper and cheese. Add cooked quinoa and mix very well. One by one, add each veggie and mix thorougly.

Pour into the muffin tray - this mix would fill 12 muffin cups. Bale it at 375 F for 25 minutes. 

Take it out. Use knife to loosen the edges from the sides. Healthy and easy-to-make egg veggie muffins are ready!!
